All Chocolate Cocotte
For 4 to 6 cocottes
Preparation time: 20 min
4.5 oz butter + 2 oz for the cocottes
4.5 oz sugar
7 oz dark chocolate
2 oz flour
0.75 oz corn starch
0.75 oz powdered cocoa
Cut the chocolate and butter into small pieces and melt in a saucepan in a bain marie. Allow 2 oz of butter to soften for coating the cocottes. In a bowl, mix the flour, potato starch and cocoa. Add the sugar to the melted chocolate and then the whole eggs and beat well with a whisk. Incorporate the flour / cocoa mixture into the chocolate until the paste is completely uniform. With a brush, generously butter the inside of the cocottes with the reserved butter. Divide the paste between the cocottes and set aside in the refrigerator for at least 30 minutes (it is even better to prepare them a day in advance).
Preheat the oven to 200°C/ 400°F.
Cook the cocottes for 7 to 8 minutes.
